Eggless Cheesecake

It was my friend’s birthday and she wanted cheesecake without egg. I searched everywhere to try to find one but sadly could not. So I decided I was going to bake one from scratch!

I found this recipe online. It looked simple enough but there was one problem, I didn’t have a spring form pan and it was too late to get one!


Servings – 6 to 8

For the Crust

  • 1 3/4 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 2 tsp cinnamon

For the Cheesecake

  • 2 8 oz packets cream cheese
  • 2 1/2 cups sour cream
  • 2 tbsp cornstarch
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

For the Sauce

  • 1 lb. strawberries, washed and sliced
  • ¼ cup sugar
  • ¼ cup water
  • A little lemon zest (optional)



For the Crust

Take the ingredients for the crust and put it in a zip lock back and mix it up thoroughly. The way I solved the problem of not having a spring form pan was using a pie dish. I basically took wax paper and lined the pie pan as you can see in the picture below. I then poured the mixed up crust ingredients into the dish and pressed down to form the base crust. After that you need to put it in the freezer.

For the Cheesecake

Preheat the oven to 375F. In a mixing bowl, mix the cream cheese and sugar well with a hand blender.

Add in the vanilla, cornstarch, salt and mix well. After that add in the sour cream and blend well.

Pour the mixture into the pan over the crust.


Ready To Bake

Now for the baking, heat water in a kettle. Place the pie dish into a roasting dish as in the picture below. Pour the hot water from the kettle into the roasting dish so that the water comes up the side of the pie dish by about an inch. Place this entire setup into the oven for about 60 minutes. This setup prevents cracks in the cheesecake.

You can check if the cheesecake is done by checking that it’s firm to touch and doesn’t move like jelly. Now you can carefully lift the cheesecake out of the pie dish holding the wax paper. Peel off the paper, cover the cheesecake and place in the freezer for a couple of hours.

For the Sauce

Take all the ingredients for the sauce and combine them in a pot over medium heat and stir continuously to mix well. Let it cook for about 20 minutes or until the strawberry is very soft and mashes pretty easy. Let is cool for sometime. Now pour this over the cheesecake and viola it’s ready!
