Cajun Inspired Eggs!

It’s Mardi Gras this week and for some reason it made me want Cajun food 🙂 So here you have it, Cajun eggs.

Cajun Eggs!

Ingredients

Servings – 1 to 2

  • 4 Eggs
  • 1/2 green pepper, diced
  • 1/2 tomato, diced
  • 1/4 big red onion
  • 3 cloves of garlic, chopped fine
  • 3 thick cut bacon strips, sliced
  • 1/4 cup water
  • 1.5 tsp Cajun Street spicing
  • Salt and freshly ground black pepper

Instructions

Slice the bacon into strips about 1/4 inch wide. Fry the bacon first until it’s done to your liking. Once done, take the bacon out and set aside. Save the bacon fat in the frying pan.

Now add the diced onions and green peppers to the bacon fat and sauté it for about 5 minutes. Then add in about 1.5 tsp of the Cajun Street spice. You can add more if you would like it to be spicier!

Now mix in the Cajun spice and fry for another minute. Add in the Garlic. Mix well.

Add in the diced tomatoes. Saute this for about 2 minutes.

Now add in the 1/4 cup of water. Let this simmer for about 5 minutes or until the water is about half gone.

Here is the fun part, make 4 holes in the sauce like you see in the picture. This is where the eggs will go in.

Now break in the eggs into each hole carefully, one at a time.

Once done, put the heat on med-lo and cover the pan and let it cook for about 5 minutes or until the eggs look poached.

Turn off the heat and sprinkle on the bacon. Add salt and pepper over the eggs!

You can serve it with a side of bacon 🙂
